  • 1/4 cup dry red wine or additional chicken broth
  • 3 minced garlic cloves
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Minced fresh parsley, optional

Directions:

Step 1: Boil

Place chicken in a large pot and cover with water. Bring to a boil and allow it to slow cook.

Step 2: Mix

Mix green peppers, tomatoes, onion, tomato paste, garlic, chicken broth, wine, pepper, and salt in a medium-sized bowl. Pour this mixture over the chicken as it cooks. Cook your chicken covered for about 6 to 8 hours, or until your chicken is tender.
