This is a healthy cheddars chicken tortilla soup that is very easy to make and is so delicious, even if you are not familiar with it. The best thing about this recipe is that it uses simple ingredients... So, let's go for it!

- Butter - Onion medium sized,  finely chopped - Cloves of garlic,  chopped finely - Jalapeno pepper,  seeded and chopped - Red bell pepper  thinly sliced - All-purpose flour - Chicken stock - Cream - Grated good quality cheddar - Salt and pepper and more ........................

In a medium soup pot, melt the butter, add onions and cook for about 5 minutes. Add the peppers, and garlic and cook for 2 to 3 minutes.....

Boil the chicken and save the broth! Once done, de-bone and shred it into small pieces!.....

Whisk in the chicken stock slowly, and stir in the cream. Bring the soup to a bubble and reduce the heat to allow it to simmer. Stir in the cheese and season the soup with salt, chilli powder, pepper, and cumin.

Let the soup reduce for about 10 to 15 minutes over low heat.  Serve with tortilla chips or the sides of your choice
