Ingredients

  • 450 g processed cheese  like Velveeta
  • 240 ml milk
  • 10 oz diced tomatoes with green chilies like Rotel
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tbsp butter
  • 1 tsp ground cumin
  • salt and pepper to taste

Instructions

  • First, I start by preparing all the ingredients. I chop the onion finely and mince the garlic. It’s crucial to have everything ready before we begin cooking to ensure a smooth process.
For onions and garlic, I need a small frying pan. This will cook the onions faster, but I always make sure they don’t turn dark. My soup will be creamy and the dark onions will stand out unattractively in it. Therefore, it is enough for it to become slightly golden. Then I add the garlic and cook for another minute, stirring. I just love the smell of garlic from the frying pan.

  • When I make soup with cheese, I always cut it into large cubes. Since if you add it in large portions, then part of the cheese may already melt, while the other may still be quite hard. Therefore, it is better that the cubes are the same size. I pour milk into the pan and cheese cubes into it. It is important to stir constantly, because sometimes the cheese starts to stick to the pan.
    Processed cheese
  • Once the cheese is melted, I stir in the can of diced tomatoes with green chilies, including the liquid. I also add the ground cumin, salt, and pepper.

  • If the queso is too thick, I gradually add a bit more milk until it reaches my desired consistency. If it’s too thin, I let it simmer for a few more minutes to thicken up.

Everything is ready, let’s set the table. Next to the soup, place a plate of warm tortilla chips, a set of fresh vegetables, or nachos. You can add tacos, burritos or fajitas for those who like something spicy. If the combination is very hot, take care of cold soda or margarita to put out the fire in your mouth.

My husband likes his dishes to be as spicy as possible. So I add some finely chopped jalapeño to his plate separately. If you can’t find it at the store, any hot sauce will do.

Have you decided to lose weight by summer, but you saw my recipe and want to cook it? I give you advice – replace some of the cheese with cauliflower purée. Also, choose low-fat milk. This will significantly reduce your caloric intake. And if you try half a bowl of soup, it will only be 90 calories, maybe that’s not that much, huh?

I sometimes add gourmet ingredients like roasted red peppers, caramelized onions, or a splash of truffle oil to elevate this classic dip. These additions give the queso a unique and sophisticated twist.

Ania`s Tips and Tricks

One common mistake is overheating the cheese, which can cause it to become grainy. Always melt the cheese slowly over medium heat, and stir continuously to prevent burning.

If you have leftovers, store the queso in an airtight container in the refrigerator. When reheating, do so gently over low heat, adding a splash of milk to maintain the creamy texture.

Rubbermaid Brilliance Food Storage Containers have been my choice for years. Reliable and durable containers that look great in the refrigerator.

For smooth and silky queso, I learned from a Casa Ole insider to always use freshly grated cheese if you’re not using processed cheese. Pre-shredded cheese contains anti-caking agents that can affect the texture.

FAQ

I didn’t even think that my friends and acquaintances would have so many questions when they tried this dish. I will write the most frequent ones here and answer them. You can write your questions in the comments.

How do you keep queso from getting grainy?

To maintain a smooth texture, avoid overheating the cheese and add it gradually. Stir constantly and keep the heat at medium.

Can you make Queso ahead of time?

Yes.

What kind of cheese is best for queso dip?

Processed cheese like Velveeta works best for a smooth, creamy texture. Alternatively, a blend of cheddar and Monterey Jack can be used for a more natural option.

How do we change the consistency of Queso?

It’s simple – for thickness, I add more cheese. And to make it more liquid, milk comes to the rescue.

Conclusion

I love simple recipes. And of course cream soups. They are so soft and light. I think this recipe is simple – even the ingredients are not that you need to run around many stores. Everything can be found in the nearest supermarket.

Therefore, please help your loved ones with a new dish this coming weekend. I don’t think they’ve ever tasted something so delicious.

I’d love to hear how your queso turns out! Feel free to share your experiences, tips, and any options you’ve tried in the comments below. Enjoy!
