Ingredients
  

Chicken

  • 4 chicken breasts (cut into chunks)
  • 3 cups of buttermilk
  • 2 tablespoons of sriracha
  • 3 tablespoons of salt
  • 1 cup of all-purpose flour
  • 2 teaspoons of black pepper
  • 3 beaten eggs
  • 2-3 cups of panko
  • vegetable oil (to fry)

Seasoning

  • 3 tablespoons of cayenne
  • 4 tablespoons of paprika (smoked)
  • 2 tablespoons of sugar (brown)
  • 1 tablespoon of chile powder
  • 1 tablespoon of garlic powder
  • 1 teaspoon of paprika
  • 2 tablespoons of garlic (minced)
  • 1/3 cup of hot oil

Instructions

  • Prepare the chicken
    Grab a zip-top bag and add two teaspoons of salt, alongside the buttermilk, Sriracha, and chicken. Give it a shake and ensure that the chicken is coated well. Place in the refrigerator and leave for around two hours.

  • Bread the chicken
    Grab a bowl (try to use a shallow bowl if possible) and add the pepper, one teaspoon of salt, and the flour. Stir well. In another bowl, add the eggs (ensure they're beaten first). And in the last bowl, add your breadcrumbs. Place them in a line so it's easy to work with each bowl. First, place your chicken in the flour, and shake. Then place into the egg (ensure it's completely covered) and then place into the breadcrumbs. The entire chicken breast should be coated. Repeat until all the chicken is breaded.

  • Fry the chicken
    Using a deep pot or fryer, heat your oil until it reaches around 350F. Place each chicken breast into the fryer and fry for around 5-6 minutes. Ensure the juices run clear from the chicken and the outside has a golden brown color.

  • Make the seasoning
    Using all of the seasoning ingredients, add to a bowl and mix well.

  • Serve
    Place each piece of fried chicken into the bowl of seasoning and your fried chicken is now ready to serve! You can serve your chicken with a dip of your choice.
