Ingredients
  

For the cajun flour:

  • 1 cup of plain flour
  • 1 tablespoon of salt
  • 1/2 tablespoon of celery salt
  • 1 tablespoon of ground black pepper
  • 1 tablespoon of dry mustard
  • 2 tablespoons of paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1/2 tablespoon of cayenne pepper
  • 1/2 teaspoon of thyme

For the roasted chicken bites:

  • 4 chicken breast halves (cut into chunks)
  • 1 cup of the homemade cajun flour
  • 1/3 cup of lemon juice
  • 1 tablespoon of cajun seasoning
  • 2 tablespoons of Tabasco sauce
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of vinegar
  • 3 eggs

Instructions

  • Prepare the homemade cajun flour
    In a bowl, add all of the ingredients for the cajun flour. Mix together with a whisk and place in a sealed container until needed.
    1 cup of plain flour, 1 tablespoon of salt, 1/2 tablespoon of celery salt, 1 tablespoon of ground black pepper, 1 tablespoon of dry mustard, 2 tablespoons of paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1/2 tablespoon of cayenne pepper, 1/2 teaspoon of thyme
  • Marinate
    Grab a bowl and add lemon juice, Worcestershire sauce, cajun seasoning, vinegar, garlic, and Tabasco sauce. Mix well and then add the chicken bites to your bowl. Ensure each piece is completely coated in the sauce. Cover and leave overnight (6-8 hours is ideal).

  • Coat the chicken
    Before you start, preheat your oven to 400F. Place the homemade cajun flour in one bowl. In a separate bowl, beat the eggs. Take the chicken bites out of the refrigerator and remove from marinade. Place chicken bites individually into the egg and then into the flour. Repeat until all chicken is coated.

  • BakeArrange the coated cubes onto a baking sheet. Place in the center of your preheated oven and cook for around 10-12 minutes. Your chicken is now ready to serve!
