Ingredients
  

For the tacos

  • boneless chicken thigh meat, skinless
  • 2 limes, juiced
  • 2 cloves of minced garlic
  • 2 tbsp. of taco seasoning mix
  • 2 tbsp. of vegetable oil
  • 1 tsp. of brown sugar
  • 1/2 head of shredded lettuce
  • 2 diced large tomatoes
  • 1/2 cup of shredded cheddar cheese
  • 8 flour tortillas

For the sauce

  • 1/4 cup of mayonnaise
  • 1 tbsp. of milk
  • 1 tsp. of lime juice

Instructions

  • Marinate the chicken
    Grab a bowl and add your chicken thighs, garlic, taco seasoning mix, lime juice, brown sugar and one tablespoon of oil. Using your hands, rub the ingredients into the meat and leave to marinate in the refrigerator for at least 4 to 5 hours. Ensure it's covered. If you can leave to marinate overnight, that would lead to tastier chicken. Now remove from the marinade and cut into small one-inch pieces.

  • Cook the chicken
    Heat one tablespoon of oil over a medium heat. Once hot, add the chicken to the pan and cook until the chicken is lightly browned, and the juices run clear. If you'd prefer, you can grill the chicken over coal until charred. Remove from heat and keep warm.
  • Warm the tortillas
    You can either warm the tortillas in the microwave for easiest results. Or you can place over a medium heat and cook in a skillet for around 20 seconds on each side; this definitely has tastiest results!

  • Make the sauce
    Grab a bowl and add the mayonnaise, milk, and lime juice and mix well. Leave to one side.

  • Assemble
    Add a few pieces of chicken in the middle of your tortilla. Next add some lettuce, tomato slices and a handful of cheese. Now drizzle the sauce over the top. Repeat until all tacos have been used. Enjoy!
