Ingredients
  

  • 2-3 tablespoons olive oil
  • 1 pound chicken breasts, boneless, skinless, sliced
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 3 cups button mushrooms, sliced
  • Sea salt flakes, to taste
  • Freshly ground black pepper, to taste
  • 2 cans Campbell's Cream Of Chicken With Herbs
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh oregano leaves
  • 1 tablespoon Worcestershire sauce

Instructions

  • Brown the chicken
    To start, heat the olive oil in a medium pot over medium-high heat. Then, add some slices of chicken to the hot oil (don't overheat the pan). Brown the chicken in small batches for about 3-5 minutes per side.
    The chicken won't be completely cooked. This step is just to give them some color and flavor.
    As you finish a batch, drain it on a paper towel and set it aside.

  • Cook your ingredients
    Once your chicken has been fried, add more olive oil to the pan if needed. Then, add the diced onion and saute it for 5 minutes. Add the garlic and allow it to cook for only a minute.
    Then, over medium-high heat, add the mushrooms. Cook them for about 5 minutes until they start softening.
    Finally, add your chicken and season everything with salt and pepper.

  • Cook your cream of chicken soup
    Add your canned cream of chicken with herbs. Mix all of the ingredients very well.
    Then, bring the soup to a gentle simmer. Leave it to cook, covered, for about 30 minutes. Stir occasionally to prevent the bottom of the soup from catching.

  • Finish off your soup

Notes

After your soup has cooked completely, you can shred the chicken if you'd like. This is also a great way to alter the exact texture of the final soup. If you like chunky chicken soup, leave the chicken pieces as-is. But, if you have toddlers, rather shred the chicken into much smaller strands.
This Campbell's condensed cream of chicken with herbs soup can be made in advance. You can store it in the fridge for up to 3 days. Or, inside the freezer for several months. To defrost the soup, simply place it directly into a pot over medium heat.
