- The chicken marinade
- ¼ tsp salt
- 1 tsp dried soybean powder
- ½ tsp garlic powder
- ½ tsp ginger powder
- ½ tsp mustard powder
- ¼ tsp white pepper
- ¼ tsp season-all salt seasoned salt
- 6 pieces of chicken drumsticks/thighs/wings
- The flour coating
- 90 g all-purpose flour
- 40 g potato starch
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp mustard powder
- ½ tsp garlic powder
- ½ tsp ginger powder
- ½ tsp white pepper powder
- The batter:
- 20 g rice flour
- 10 g all-purpose flour
- 1 small egg
- ½ tsp salt
- ½ tsp dried mustard powder
- ½ tsp cayenne powder
- 160 ml cold soda water
- 2-3 cups of extra virgin olive oil
Step 1: Marinate the chicken for a minimum of 2 hours
Mix all the chicken marinade ingredients together in a bowl, including the chicken. Once mixed, place in the fridge for 2-6 hours.
Remove from the fridge at least 30 minutes before cooking, so the chicken is not cold when cooking.
Step 2: Make the flour and batter.
Mix all the ingredients for the flour coating into a large, shallow dish. Make the batter by whisking all batter ingredients together in a separate bowl. Dredge the marinated chicken pieces in the flour and dust off the excess. Once coated in flour, place into the batter mix until coated well.
Step 3: Fry the chicken
Place a heavy, medium-sized pan over a medium heat to heat up the extra virgin olive oil. Heat it up for at least 10 minutes. When ready, a wooden chopstick inserted into the oil should shows lots of bubbles.
Once the oil becomes hot, dip the already coated chicken pieces into the oil and allow them to cook. Regulate the heat accordingly to avoid burning them before they cook inside.
Do not overcrowd the pan with too many chicken pieces; allow enough oil to circulate each chicken piece.
Cook the wings for around 12 minutes, drumsticks for around 18 minutes, or thighs for around 20 minutes. Remember to turn them in every few minutes, so it's evenly cooked.
