- 2 lb of ground chicken (thigh meat)
- 1 tbsp. of salt
- 1 tsp. of ground fennel
- 1 tsp. of ground black peppercorn
- 1/4 cup of white wine
- 1/2 cup of chopped parsley
- 1/2 cup of breadcrumbs
- 2 eggs
- 2 tbsp. of olive oil
PrepareGather all of the ingredients you'll need for this recipe and preheat your oven to 450F. Also prepare a baking dish by drizzling the olive oil and using your hands to ensure the dish is completely covered Prepare the meatballsAdd the chicken, salt, fennel, black peppercorn, wine, parsley, breadcrumbs and eggs to a bowl. Use your hands to ensure that the mixture is combined well. Once you've mixed enough that you can mould, roll the mixture with your hands into golf size balls. If you're struggling, you can use an ice cream scoop to obtain the perfect shape. Cook the meatballsOnce moulded, place the meatballs onto your prepared dish. Place into the center of your preheated oven and cook for around 14 minutes. The balls will be firm once cooked.
