Ingredients
  

  • 1 lb of chicken breast
  • 2 x 14oz cans of corn (cream style)
  • 1 x 14oz can of sweetcorn (drain)
  • 2 russet potatoes (peel and chop)
  • 4 oz pimentos (diced)
  • 1 stalk of carrots (diced)
  • 1 stalk of celery (diced)
  • 2 cups of chicken broth
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • salt (to taste)
  • black pepper (to taste)
  • 8 oz of cream cheese (cubes)
  • 16 oz of heavy whipping cream
  • Old Bay seasoning (to taste/optional)

Instructions

  • Prepare
    Gather all of your ingredients. Prepare all of your vegetables. You need to drain the sweetcorn before using it. Then you'll need to peel and chop the potatoes, dice the pimentos, carrots and celery, and cube your cream cheese.
  • Add to slow cooker
    For best results, this recipe requires a slow cooker. Add all of your prepared vegetables and other ingredients to your slow cooker; ensuring you leave the cream cheese and heavy whipping cream outside of the slow cooker for later. You'll need to leave the cooker on high heat for around 4-5 hours (or 6-8 hours on a low heat).
    2 x 14oz cans of corn (cream style), 1 x 14oz can of sweetcorn (drain), 2 russet potatoes (peel and chop), 4 oz pimentos (diced), 1 stalk of carrots (diced), 1 stalk of celery (diced), 2 cups of chicken broth, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, salt (to taste), black pepper (to taste), Old Bay seasoning (to taste/optional)
  • Add dairy
    Around 20 minutes before the dish is ready, turn the heat to low (if it isn't already). Now it's time to shred the chicken and add the cream cheese and whipping cream. Mix well until well combined with the other ingredients.
    1 lb of chicken breast, 8 oz of cream cheese (cubes), 16 oz of heavy whipping cream
  • Serve
    After twenty minutes, mix once more. If there are any remaining lumps of cream cheese, leave for a further five minutes. Once the cream cheese has melted, stir well and your chowder is ready to serve. Enjoy!

Notes

Using a slow cooker saves a lot of time, and is super easy to prepare. However, if you use a liner for your slow cooker - it can make your cleaning up time even easier!
Make more than you need! This soup can be frozen, so if you make a large batch and don't finish it all, you can pop it in the freezer for another day
