What Is This Chicken Di Pana Recipe?

Chicken di pana is one of the most famous dishes on the menu of The Cheesecake Factory. Unfortunately, from what we could tell, it has vanished completely from all of their menus and is nowhere to be found.

Luckily, today we will recreate this delicious crispy chicken dish with our own homemade recipe.

But, what exactly is chicken di pana? It is said to be an Italian-inspired chicken recipe. The main components are crispy battered chicken breasts and a mouth-watering creamy white wine sauce. By all accounts, it’s the sauce that makes this dish special.

Remember to use high-quality white wine. You can use this guide to help you choose the best option for your palate preference.

This dish was usually served alongside broccoli and creamy mash. Simply accompaniments by all means, but they were intended to add simple textures to not take away from the crispy chicken.

We will only be focussing on making the chicken breast and white wine sauce today. If you can master these two elements, you can serve them with any accompaniment of your choice.

What You Need To Make Our Chicken Di Pana Recipe

Ingredients for the crispy chicken

  • 4 large chicken breasts, skinless and boneless
  • 1 cup cake flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large eggs, beaten
  • Olive oil, for frying

Ingredients for the sauce

  • 2 shallots, finely diced
  • 1/2 cup chicken broth
  • 1/2 cup white wine vinegar
  • 1/2 cup white wine
  • 1/2 cup butter, diced
  • Salt and pepper, to taste

Equipment

  • Meat tenderizer or rolling pin
  • Measuring cups and spoons
  • Mixing bowls
  • Frying pan
  • Medium saucepan
  • Whisk

Step by step instructions

Step 1: Prepare the elements for the chicken

To start, beat the chicken with a meat tenderizer until it reaches about 1/4 of an inch in thickness. Set the chicken breasts aside once you finish all of them.

Then, combine the flour, baking powder, and spices in a mixing bowl. Make sure to whisk them well to ensure that all of the flour is seasoned. Set this bowl aside.

Add the beaten eggs inside another medium mixing bowl.

Step 2: Coat the chicken breasts

To start, dip each chicken breast in some seasoned flour. Then, drenge them in the beaten eggs. Make sure that most of the excess beaten eggs drip off the chicken breast before dipping them in the seasoned flour again.

As you finish coating each chicken breast, place them on a plate or in a baking tray.

Step 3: Cook the chicken breasts

Add some olive oil to a frying pan and place it over medium-high heat.

Then, add the coated chicken breasts and cook them for roughly 4 minutes per side. After about 8 minutes has elapsed, test the doneness of the chicken breast in the thickest part. If the chicken is still undercooked, leave it on the heat for a little while longer.

Repeat this process until all of your chicken breasts are fully cooked, golden brown in color, and crispy.

Step 4: Make the white wine sauce

To start, combine the finely diced shallots, chicken broth, white wine vinegar, and white wine in a saucepan. Bring the mixture to a boil over medium-high heat.

Once boiling, lower the heat and allow the mixture to simmer until it is reduced to half. This will take about 5-8 minutes.

When it is reduced, remove the sauce from the heat. Slowly whisk in the cubed butter until the sauce is super creamy and uniform in consistency.

Finally, adjust the flavor with some salt and freshly ground black pepper.

Step 5: Serve the chicken di pana recipe

To serve this dish, pour your delicious white wine butter sauce over the crispy pan-fried chicken breasts.

Serve the chicken alongside steamed broccoli and mashed potatoes. Alternatively, serve it with your favorite accompaniments.

Expert Tips And Tricks

  • This recipe doesn’t make the chicken with a breaded coating. Instead, it uses a type of deconstructed batter. First, you dip it in flour, then egg, then flour again. This creates a very soft yet crispy exterior that makes our chicken di pana recipe unique as well.
  • You absolutely have to tenderize the chicken breasts. It makes the meat a lot more tender and helps it cook much faster. If you skip this step, your cooking times will increase two-fold.
  • You can season the flour for the chicken coating in any way that you’d like. We like to keep it simple, just like the original Cheesecake Factory recipe was. But, there is always room for change and improvement.
  • If you would like to, you can make this crispy chicken inside the oven or in an air fryer. For both, preheat the appliance to 360ºF (180ºC). Bake the chicken in an oven for roughly 15 minutes and cook it in the air fryer for about 10 minutes.
  • Always check the doneness of your chicken before removing and serving it. Undercooked chicken can cause serious food poisoning. So, use this guide to help you determine when your chicken is completely cooked.

FAQs

Can you add whipping cream to the chicken instead of butter?

The butter in the chicken di pana recipe can be substituted with whipping cream. Do not use whipped cream. The consistency of the sauce needs to be smooth, runny, and creamy - not aerated and fluffy. If you do substitute the butter with cream, just remember that the sauce will lose some of its rich flavors.

Why do you use wine vinegar for chicken di pana?

The white wine vinegar in all chicken di pana sauce recipes helps add a slightly tart and tangy flavor to the dish. This helps create a more balanced flavor profile that isn't just creamy and salty.
