Equipment

  • Large Mixing Bowl
  • Rolling pin
  • Baking sheet
  • Parchment Paper
  • Skillet
  • Wooden spoon

Ingredients

Dough:

  • 3 cups all-purpose flour for a healthier option, you can use whole wheat flour
  • 1 teaspoon salt
  • 1 cup butter unsalted, cold, cubed
  • 1 cup ice water

Filling:

  • 1 pound ground beef  you can substitute ground beef with ground chicken, turkey, or a vegetarian meat alternative
  • 1 medium onion finely chopped
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper to taste

Instructions

Making the Dough

  • In a large bowl I mix flour and salt to which I will then add butter. For convenience, I cut it into cubes while still cold. Mix well, the dough should have a consistency similar to large crumbs.Next, all that remains is to add cold water. It is better to do this gradually, forming a homogeneous ball of dough. It should be left in the refrigerator for 20 minutes. Then, I roll out the dough to about 1/8" thick and cut into 4" x 6" rectangles.

Choosing and Preparing the Filling

  • In a skillet, I cook the ground beef over medium heat until browned. I drain any excess fat. I add the chopped onion and any additional vegetables I prefer. I cook until the onions are translucent. I stir in garlic powder, paprika, salt, and pepper.
I cook for another 2-3 minutes. I remove from heat and let the filling cool slightly before assembling the pockets.

Filling and Sealing the Pockets

  • I place a spoonful of filling in the center of each dough rectangle. I sprinkle shredded cheddar cheese over the filling. Then I fold the dough over the filling to create a pocket. Pressing the edges with a fork, I seal them tightly.
