Ingredients
  

  • 2 lbs of chicken breast
  • 2 lbs of bacon
  • 1 lb fresh jalapeno

Instructions

  • Step 1: Cut the jalapenos
    First, cut the jalapenos lengthwise in half and remove all the seeds. You can use canned jalapenos for this, if you do not have fresh ones. 
  • Step 2: Cut the chicken
    Flatten out the chicken to around 1″ thick and cut it into 4-6 pieces (the right size to roll over a jalapeno half)
  • Step 3: Seasoning
    Season the chicken with a seasoning of your choice.
  • Step 4: Wrapping
    Take each chicken piece and roll it around a jalapeno half, then add a slice of bacon over the top. Hold it firmly with a toothpick. This process can take quite some time, so allow time to get this stage right.
  • Step 5: Grill or bake
    Grill until the bacon is crisp and the chicken is cooked through. You can also bake them in the oven at 350 degrees Fahrenheit for about 45 minutes, if you’d prefer.
  • Final step:
    You can do a test run on your first armadillo egg to check the seasoning is how you want it to be. If not, you can change the rest of the batch.
