Chicken Eggplant Mushroom Stir Fry Recipe

Ingredients
  

  • 1 Tablespoon Olive Oil
  • 1 Fresh Eggplant Medium
  • 1 Pound Chicken Breast Skinless, Boneless
  • 2 Cups White Mushrooms
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • 1 Tablespoon Garlic Minced
  • 2 Tablespoons Soy Sauce

Instructions

  • Using the cutting board and the Chef’s knife, cut the ends off of the eggplant. Then slice the eggplant longways in half. On the open end of the eggplant slices, sprinkle salt. Allow the eggplant slices to sit for 4-5 minutes, then dice the eggplant into cube-sized pieces.
  • Using the cutting board and the Chef’s knife, prepare the chicken. Cut the chicken into cube-sized pieces like the eggplant.
  • On a burner, heat the skillet to medium heat. Drizzle in oil. Dump in the cubed chicken pieces, minced garlic, and soy sauce. Stir. Cook until the chicken is cooked all the way through.
  • Once the chicken is cooked all the way, it’s time to add the mushrooms. Make sure to rinse the mushrooms before adding them in. Sprinkle the chicken and mushrooms with black pepper. Mix.
  • Cook for about 3-4 minutes.
  • In a separate skillet, set the burner to medium heat. Add the canola oil. When the oil heats up, add in the eggplant. Cook until the eggplant is browned on both sides.
  • After the eggplant has cooked in a separate skillet, add it to the skillet with the chicken and mushrooms. Stir to combine.

Notes

  • Buy the already sliced mushrooms for less time spent prepping the ingredients for this recipe! 
  • For an extra nutritional kick to this delicious dish, add in spinach! After step 6, add in about 1-2 cups of fresh spinach, allowing it to wilt for about 2-5 minutes before serving.
