- 1 cup oat floor
- 2 eggs
- 1 cup Greek yogurt
- 1 ripe banana
- 1 tsp vanilla extract
- 1 tsp baking powder
- a pinch salt
First, I pour the oat flour, baking powder, and a pinch of salt into a large bowl.
Next, I mash the banana in another bowl. Make sure your banana is ripe – it’s important for sweetness and texture.
I add the eggs, yogurt, and vanilla extract to the banana and mix well.
I combine the wet and dry ingredients, mixing well until smooth. I heat a skillet over medium heat and lightly grease it with oil.
I spoon the batter onto the skillet and cook the pancakes for 2-3 minutes on each side until golden brown.
I serve them hot with my favorite toppings.
