  • 1 chicken breast,boneless, skinless
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon fine salt
  • 1/8 teaspoon ground cumin
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon garlic powder
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon lemon juice
  • 1 small green bell pepper, deseeded and diced
  • 2 shallots, diced
  • 1 small tomato, diced

  • 6 large eggs, beaten
  • Fine salt, to taste
  • Freshly ground black pepper, to taste
  • 3 tablespoons salted butter
  • 1 cup cheese of your choice, grated
  • Salsa, for garnish
  • Sour cream, for garnish
  • Guacamole, for garnish

Instructions

  • Prepare the chicken breast
    To start, place the chicken between two sheets of plastic wrap. Then, pound it with a rolling pin or meat tenderizer. It should be about 1/4 inch in thickness.
    Cut the chicken breast into bite-sized cubes. Set it aside.
    Then, mix together the cayenne pepper, salt, cumin, black pepper, and garlic powder.
    Sprinkle the spice mix over the cubed chicken and toss it. Make sure all the pieces are coated very well.

  • Brown the chicken pieces
    Next, heat some olive oil in a frying pan. Use medium-high heat. Then, add the meat and fry it until it starts to brown. This will take about 2-4 minutes, depending on the exact heat used.

  • Cook the chicken and vegetables
    Once your chicken is browned, add the lemon juice, green bell pepper, and onions. Allow the meat and veggies to simmer over medium heat for about 5-8 minutes.
    Once the veggies start to brown, add the diced tomatoes. Cook the mixture for another 2-3 minutes. Then, season the mixture to your liking. Set it aside.

  • Make the omelette base
    Next, whisk together the eggs and season them with salt and pepper.
    In a clean large skillet, add half of the butter over medium heat. Once it has melted, add half of the beaten eggs. Swirl it around to ensure the entire pan is covered with an even layer.
    Allow the eggs to cook for a couple of minutes until the top just starts to firm up.

  • Finish the fajita omelette recipe
    Then, add a quarter of the grated cheese, some salsa (if you're using any), and a quarter of the fajita filling. Fold over the omelette edges of the omelette and leave it to cook for another minute or so.
    Then, carefully flip over the entire fajita omelette and cook it on the other side for 1-2 minutes.

Notes

When cooking the first addition of beaten eggs, make sure that the bottom doesn't get too dark. If you see that happening, turn down the heat. The top should slowly cook and the base should remain "pale."
This is not a recipe that can or should be made in advance. Once your eggs are cooked, they have the best texture and flavor that they could possibly have. The only element that you can make ahead of time is the chicken fajita filling. It can be stored inside the fridge for a day or two, but no longer.
