  • About 3 pounds boneless skinless chicken thighs
  • 2 chopped medium green peppers
  • 1 can undrained diced tomatoes with basil oregano, and garlic
  • 1 can tomato paste
  • 1 chopped medium onion
  • 1/2 cup chicken broth
  • 1/4 cup dry red wine or additional chicken broth
  • 3 minced garlic cloves
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Minced fresh parsley optional

Instructions

  • Place chicken in a large pot and cover with water. Bring it to a boil and allow it to slow cook.
  • Mix green peppers, tomatoes, onion, tomato paste, garlic, chicken broth, wine, pepper, and salt in a medium-sized bowl. Pour this mixture over the chicken as it cooks. Cook your chicken covered for about 6 to 8 hours, or until your chicken is tender.
  • In another bowl, mix the cornstarch and water until it's smooth. Gradually stir it into the slow cooking chicken. Cook it for another 30 minutes, or until the sauce begins to thicken. Sprinkle parsley before serving.
