- 2 lb of small potatoes
- 1 tablespoon of apple cider
- 1/2 cup of sour cream
- 1/4 cup of mayonnaise
- 1 tablespoon of yellow mustard
- 1/2 finely chopped red onion
- 3 chopped celery stalks
- 1 finely chopped dill pickle
- 1/4 cup of fresh herbs (parsley, chives etc.)

Prepare the potatoesAdd some water to a pan and add the potatoes. Season the water with salt. Bring to a boil and leave simmering for around 15-20 minutes, or until for tender. While the potatoes are simmering, add some ice to a bowl of water, and once the potatoes are cooked, place them into the ice bath and peel away the skin gently.
