Now all you need to do is:

Step 1: Prepare the potatoes

Add some water to a pan and add the potatoes. Season the water with salt. Bring to a boil and leave simmering for around 15-20 minutes, or until tender. While the potatoes are simmering, add some ice to a bowl of water, and once the potatoes are cooked, place them into the ice bath and peel away the skin gently.

Chop the potatoes into small chunks and add to a bowl. Season with salt and vinegar.

Step 2: Prepare the onions

After you’ve chopped your onions, place them into a bowl with cold water. After around 10 minutes, drain the water and leave the onions to one side.

  • 1lb of peeled sweet potatoes
  • 2 tablespoons of olive oil
  • 2 teaspoons of cornstarch
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika

Step 1: Prepare

Cut your sweet potatoes into French fry strips, keeping them as evenly sized as possible. Once finished cutting, add the fries to cold water for at least 30 minutes. In the meantime, line a baking sheet with parchment paper and preheat your oven to 425F.
