About Our Take On Zia’s Chicken Spiedini Recipe
Zia’s is a famous Northern Italian restaurant located in Saint Louis Missouri. They have been in business since 1985! Which should say something about their delicious food!
After their restaurant tragically burnt down, they didn’t put down their chef hats there. Instead, they rebuilt and evolved into an even bigger franchise than before.
One thing that made Zia’s special since they began their restaurant was their incredibly delicious sauces. One of the sauces that did best and is still for sale is their white wine lemon and butter sauce.
This is the sauce that they use to make their famous chicken spiedini recipe.
So, what exactly is chicken spiedini? This is a traditional Italian dish made from breaded and skewered chicken. It is topped with a delicious flavorful garlic butter sauce and some cheese.
There are hundreds of recipes out there that even use different kinds of meat.
But today, with some tweaks to Zia’s original recipe, we’ll be making it as authentic as we can. But with even more flavor and texture!

Equipment

I always use kitchen tongs when I cook, because they are convenient for turning and removing food from a hot frying pan.
Step-by-step instructions
Step 1: Marinate the chicken tenders
To start, place the chicken tenders and Sweet Italian Salad Dressing inside a zip-lock bag. Make sure to remove as much air as you can before sealing it up.
Allow the chicken to marinate inside the fridge for at least 30 minutes, but preferably up to 4 hours.
I always have zip bags at home. It’s so convenient to store food in them.
Step 2: Make the wine sauce
Melt the butter in a saucepan over medium-high heat. Once melted, add the minced garlic and sliced mushrooms. Cook them until they are finished. Then, add the Prosciutto and give it a stir.
Finally, pour in the white wine butter sauce and mix the ingredients well. Bring the sauce to a simmer and leave it for 5 minutes.
Once finished, remove it from the heat and set it aside.
Step 3: Make the breading and coat the chicken
Next, make your seasoned breading mixture. Combine the Italian breadcrumbs, Italian herb mix, and fine salt. Mix the ingredients well to ensure they are combined.
Then, remove the marinated chicken tenders from the ziplock bags. Place each tender into the seasoned breadcrumbs and ensure they are coated well.
Add the chicken pieces onto a skewer and set each portion aside. You should get about 6-8 skewers in total.
Step 4: Cook the chicken skewers
Heat your olive oil in a frying pan or on a griddle over medium heat. Place a couple of skewers in the pan and cook them for roughly 3 minutes per side (12 minutes total).
Of course, only remove the chicken once it has been fully cooked.
Step 5: Serve the chicken spiedini
Finally, place the grilled chicken skewers on a serving plate. Top them with your grated cheese and delicious garlic butter sauce. Serve this dish while your chicken is still hot.

Expert Tips And Tricks
- For a marinade to start tenderizing and flavoring meat, it should be left for at least 30 minutes. But, you can ultimately leave this recipe to marinate for up to 12 hours. This means that you can make it the night before and finish it off the next day.
- You can use any type of cheese that you like. Zia’s themselves use Provel cheese, but that may be hard to find for some people. Have a look at this list of substitutes for this cheese.
- If you are using wooden skewers for this recipe, make sure to soak them in warm water for 20 minutes before adding the chicken. This will ensure that they don’t burn over the heat of the pan.
- Don’t overload the pan when cooking your chicken skewers. If you do, they won’t cook evenly. Work in batches of 2 to 4 depending on the size of your pan.
- If you’d like you can make this recipe inside an oven. Preheat your oven to 360ºF (180ºC) and bake the chicken for about 20 minutes.
