Steps

Step 1: Make your rub

First, you need to prepare the rub. Mix all the ingredients for an all-purpose rub and store them in an airtight container.

Step 2: Marinate

Apply this rub and let it rest for about an hour before cooking the meat. As a general rule, you should try to give the rub at least one hour before you cook.

Step 3: Prepare the grill

Get your grill ready for low-and-slow cooking over indirect heat at 250 degrees F.  Fill the water pan about halfway with warm to hot water.

Step 4: Mix and season

Mix together the cheddar cheese, cream cheese, and garlic until well blended. Taste and add salt if required.

Step 5: Clean your jalapenos

Prepare the jalapenos by removing the stems and cutting them in half lengthwise. Remove the seeds and then cut the sliced jalapeños in half so that you can get 4 quarters.

Step 6: Stuff your jalapenos

In each jalapeno quarter, put about a teaspoon of the cream cheese filling.

Step 7: Cover and wrap

Take about ⅓ cup of sausage and put it around the jalapeno into a 3-inch circle. Wrap the sausage around the stuffed jalapeño completely and form into an egg shape. Wrap each egg with one strip of bacon, ensuring the seam is secured with a toothpick, if needed.

Step 8: Seasoning

Season every egg with the dry rub.

Step 9: Cook

Put the wrapped jalapeños on the cool side of the grill and allow them to cook while covered for 1–1½ hours, or until the sausage is fully cooked.

Step 10: Enjoy!

Serve them with ranch dressing.
