Now all you need to do is:
Step 1: Prepare the beans
Gather all of the ingredients you need and place a stock pot over a medium heat. Now add 1 1/2 cans of the Bush’s White Chili Beans. In a bowl, mash the remaining last half with a fork, before adding to the pot too.
Step 2: Add ingredients
Add the tomatoes and green chiles, chicken broth, cream of chicken soup, jalapenos and cooked rotisserie chicken to the stock pot. Mix well so the ingredients are evenly distributed.

Ingredients
- 3 tablespoons oil
- 3lb diced chicken breast
- 4 tablespoons butter
- 2 chopped carrots
- 3 chopped celery stalks
- 1 chopped onion
- 3 garlic cloves
- 1/2 cup flour
- 2 cups water
- 32oz chicken broth
- 1 can sweet corn
- 2 cans White Chili Beans
- 1 cup heavy cream
- 1 diced jalapeno
- salt and pepper
- 1 teaspoon cayenne pepper
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
Recipe
Step 1: Cook chicken
Heat the oil in a pot over a medium heat. Add the chicken and cook for around 10 minutes. Once cooked remove from the pan and add a pinch of salt and pepper.
Step 2: Cook the veg
Add the butter to the same pot and melt it. Now add the carrots, celery, onion and minced garlic. Cook until the vegetables become soft – usually around 5 minutes. Add a pinch of flour and stir. Then add a dash of chicken broth. Continue doing this until you have used all the flour and broth. Now add the water and stir. Leave to simmer for around 30 minutes. Stir regularly to ensure it doesn’t stick.
Step 3: Simmer
Add the beans, jalapeno, and sweet corn. Now simmer for a further 20 minutes. At this point, you can add the cream and cayenne pepper, garlic powder, onion powder, and cumin. Now place the chicken back into the pot (along with the juices) and simmer for a further 20-30 minutes.
Step 4: Serve
Your white chili chicken is ready to serve. Serve with shredded cheddar cheese and sour cream, if desired.
