Now let’s get on to the reason you’re here – how to make the Chiavetta’s chicken yourself. This recipe is inspired by one from An Edible Mosaic. If you’re looking for the moistest, juiciest chicken, this is most definitely the recipe for you.

Ingredients

The ingredients you’ll need for this recipe are:

  • 2 lb of boneless chicken breasts/skin-on bone-in chicken
  • 1/2 cup of apple cider vinegar
  • 1/2 cup of vegetable oil
  • 2 tablespoons of Worcestershire sauce
  • 2 cloves of crushed garlic
  • 1 tablespoon of sugar
  • 1 teaspoon of poultry seasoning
  • 1 teaspoon of celery salt
  • 1 teaspoon of salt
  • 1/4 teaspoon of ground white pepper
  • 1/4 teaspoon of ground black pepper

Recipe

Now all you need to do is:

Step 1: Marinate the chicken

First, we need to make the marinade. Add the white pepper, black pepper, vinegar, vegetable oil, Worcestershire sauce, crushed garlic, sugar, seasoning, salt, and celery salt to a bowl. Whisk the ingredients until well combined.

Now place your chicken into the marinade. If you’re using boneless breasts, it’s best to marinate for around 1-2 hours. However, if you’re using bone-in chicken, it’s best to leave for around 12-24 hours. This will make the chicken extra juicy when cooked.

Step 2: Cook the chicken

Preheat your grill to around 400F, or preheat your oven to around 375F. Place your chicken in the oven until fully cooked. The cooking time will depend on the size of the chicken you’re cooking and what cut of meat you’re using. The best way to tell it’s cooked is to use a thermometer. The internal temperature of breast meat should be around 165F. And the internal temperature of leg meat is around 175F. This will take approximately 35-50 minutes.

Step 3: Serve

Remove your chicken from the grill or oven, and serve with side dishes of your choice. Enjoy!
