  • 1 tablespoon of apple cider
  • 1/2 cup of sour cream
  • 1/4 cup of mayonnaise
  • 1 tablespoon of yellow mustard
  • 1/2 finely chopped red onion
  • 3 chopped celery stalks
  • 1 finely chopped dill pickle
  • 1/4 cup of fresh herbs (parsley, chives etc).

Recipe

Now all you need to do is:

Step 1: Prepare the potatoes

Add some water to a pan and add the potatoes. Season the water with salt. Bring to a boil and leave simmering for around 15-20 minutes, or until tender. While the potatoes are simmering, add some ice to a bowl of water, and once the potatoes are cooked, place them into the ice bath and peel away the skin gently.

Chop the potatoes into small chunks and add to a bowl. Season with salt and vinegar.

Step 2: Prepare the onions

After you’ve chopped your onions, place them into a bowl with cold water. After around 10 minutes, drain the water and leave the onions to one side.

Step 3: Prepare the potato salad

Grab a bowl and add the sour cream, mustard and mayo. Mix well. Add this mixture, the onions, celery, eggs, herbs and pickles to your potato chunks. Mix the ingredients together gently, and season with salt and pepper, if necessary. Serve.

Ingredients

The ingredients you’ll need for this recipe are:

  • 1lb of peeled sweet potatoes
  • 2 tablespoons of olive oil
  • 2 teaspoons of cornstarch
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • sea salt (to taste)

Now all you need to do is:

Step 1: Prepare

Cut your sweet potatoes into French fry strips, keeping them as evenly sized as possible. Once finished cutting, add the fries to cold water for at least 30 minutes. In the meantime, line a baking sheet with parchment paper and preheat your oven to 425F.

Step 2: Season the fries

Remove the fries from the water and dry with a clean towel. Place the fries into a bowl, along with olive oil. Mix well until the oil is evenly distributed. In another bowl, add the garlic powder, paprika, pepper and cornstarch, and mix well. Pour this mixture evenly over the fries, ensuring they’re all coated.

Step 3: Bake the fries

Spread the fries out onto your prepared baking tray. Place into the center of your preheated oven for around 15 minutes and flip the fries over. Place back into the oven for a further 10-15 minutes, or until they begin to brown. Remove from oven and season with salt, to taste. Serve with your meatball sub.
