Sweet Tomatoes soups were incredibly popular. The pandemic caused every store to permanently close down all of its stores.

I think everyone knows what chicken noodle soup is! But if you’re unsure, it’s a very light soup that has strong flavors of chicken. It’s a refreshing soup, that’s relatively nutritious. The main ingredient is usually chicken broth, along with chicken and noodles. However, most chicken noodle soups are full of vegetables too. Most commonly, tomatoes, onions, and carrots.

You can’t go wrong with a chicken soup with tomatoes. It may seem like a peculiar addition to soup, but it really does make it even more delicious. The chicken noodle soup recipe we’ll be looking at today is inspired by Yummy Chili’s. What I love about this recipe is that it uses big pieces of chicken, which I prefer. However, you can use smaller pieces if you wish.

 

Ingredients

The ingredients you’ll need for this recipe are:

  • 3 small tomatoes (cubed)
  • 1 carrot (cubed)
  • 1/4 of broccoli (chopped)
  • 1/4 cup of mushroom (finely chopped)
  • 1/4 cup of bell pepper (finely chopped)
  • 500g of chicken (cut into sizes of your choice)
  • 1/4 cup of noodles
  • 6 cups of chicken stock
  • 1 onion (cubed)
  • 1 garlic clove (minced)
  • 1/2 teaspoon of minced ginger
  • 1/2 teaspoon of chili paste
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of white pepper
  • 3 tablespoons of soy sauce
  • 1/2 teaspoon of mixed herbs (optional)
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of lemon juice
  • salt (to season)
  • chili flakes

Recipe

Now all you need to do is:

Step 1: Start the soup

Gather all of the ingredients you need. Heat olive oil in a saucepan. Once hot, add your onion and cook until brown. At this point, add the chili paste, ginger, and garlic; alongside the carrot, mushrooms, and broccoli. Season with salt and leave to cool for about 5 minutes.

Step 2: Cook the soup

Now add your chicken, sweet tomatoes, bell pepper, soy sauce, white pepper, mixed herbs, and oregano to the pan. Mix well to ensure it’s well combined. Stir continually for around two minutes. Then leave for around 5 minutes. At this time, it’s time to add the noodles, as well as the chicken stock. Now cover the soup and leave for around 10 minutes. The ingredients should be tender and cooked; leave for longer if not.

Step 3: Finish the soup

Remove the lid. Add your lemon juice and chili flakes. Cook for another minute or two and stir well. If your soup doesn’t seem quite thick enough, add a tablespoon of cornstarch to thicken. Add as much as you need, for the thickness you desire. If your soup needs more flavor, try adding a few drops of lemon zest to enhance the flavor.

Step 4: Enjoy!

Leave to cool for a few minutes. Pour your soup into soup bowls and enjoy your chunky chicken noodle soup!
